Healthy Fajita Bowl Recipe

Our team is constantly on the move while working on new things and it can be hard to spend hours cooking. This is probably our top go-to recipe because it is fast, delicious, and absolutely perfect for a weekly meal prep!

Although we love Mexican food, it can sometimes leave us feeling heavy. These fajita bowls are a light alternative to traditional Mexcian cuisine.

This recipe is so customizable–you can add whatever you want to make it suitable for your dietary needs. The recipe is vegan-friendly, but definitely feel free to add cheese, chicken, or steak if you’d like.

INSTRUCTIONS //

  1. Heat a large skillet over medium-high heat. When the pan is hot, add the olive oil. Add the onions and peppers and cook until tender, about 5 minutes, stirring frequently. Add water, and fajita or taco seasoning. Stir until seasoning mixes in. Add the fresh lime juice, cilantro, and stir thoroughly. Remove from heat and set aside.
  2. To assemble the fajita bowls, fill bowls with chopped romaine, then pile on the fajita veggies, black beans, tomatoes, lettuce, and avocado slices. Squeeze fresh lime juice over the bowls and serve.
INGREDIENTS //

 

  • 1 tablespoon olive oil
  • 1 red or yellow onion, cut into thin rounds
  • 1 red bell pepper, seeds removed and thinly sliced
  • 1 green bell pepper, seeds removed and thinly sliced
  • 1 yellow bell pepper, seeds removed and thinly sliced
  • 1/3-1/2 cup water
  • 1 packet of  Fajita Seasoning (your choice of brand, I use El Paso)
  • Juice of 1/2 lime
  • 1/4 cup chopped fresh cilantro
  • 1 (15 oz) can black beans, drained, rinsed, and heated
  • 2 large tomatoes, diced
  • 1 Head Romaine lettuce, washed and chopped
  • 2 avocados, sliced
  • Fresh lime juice (for squeezing over bowls)

Also, if you can’t find fajita seasoning, use taco seasoning. We love adding corn tortillas on the side and even some omega 3 packed guacamole to our bowls!
