Skinny Corn Casserole

Want another reason to love corn? It is very rich in phytochemicals and provides protection against a number of chronic diseases? That’s not the only reason we’re cookin’ up this lightened-up corn casserole. We also love this dish because one bite is reminiscent of homestyle cooking. It reminds us of the dishes our grandmothers put out during the holidays. Making this dish is sure to bring the family together around the table and create warm memories without overdoing your waistline.

This casserole is an excellent side dish or even a delicious snack. The best part is that you can eat a bowl of this and not feel guilty at all. At only 159 calories per serving, you know we will be getting seconds…maybe even thirds!

Cook time: 35-40 minutes

Instructions //

  1.    Preheat the oven to 350º F and spray a 2-quart baking dish with nonstick cooking spray.
  2.    In large mixing bowl, whisk together the eggs, and stir in the melted butter and yogurt.
  3.    Stir in the corn muffin mix, and 2 types of corn.
  4. Pour into the prepared baking dish and bake for 35-40 minutes, or until the center is set and the top is lightly golden brown.
Ingredients //

  • 1 egg + 1 egg white, beaten
  • 3 tablespoons unsalted butter, melted
  • 1 cup plain, nonfat Greek yogurt
  • 8.5-ounce box corn muffin mix ( Jiffy makes a good version)
  • 15.25-ounce can golden sweet whole kernel corn, no salt added, drained
  • 14.75-ounce can cream style golden sweet corn, no salt added
